Mendoza only exists because of water moved by hand. Everything green here was irrigated into place, which is why the vineyards stop in a hard line and the desert starts again immediately behind them.

Most people come for the wine and stay for the altitude. The valleys climb steeply toward the Andes, and a day can run from a long lunch at a bodega to a mountain road at three thousand metres without leaving the province.

It works best as an extension rather than a whole trip: three or four days after Córdoba or before Patagonia, when the pace should drop and the eating should get serious.
